Pizza Kitchen Corn Soup

3 cloves garlic -- minced
1 small onion -- minced
1 jalapeno chile pepper -- minced
1 pound white corn kernels, frozen
28 ounces crushed tomatoes -- with puree
48 ounces chicken stock
2 teaspoons cumin seed -- ground
1 tablespoon sea salt
1 tablespoon chili powder
tortilla chips
cheddar cheese -- grated
cilantro -- chopped
Saute garlic, onion,
jalapeno pepper in olive oil for 2 - 3 minutes. Add
half the corn, tomatoes, chicken stock, and seasonings. Bring to boil and
and cook 5 minutes. Blend with hand held blender or food processor.
(optional) Add the rest of the corn, bring back to a boil and cook over
medium heat for 5 minutes.
Top with grated cheddar cheese, tortilla chip, and cilantro.
Serve with salad and corn bread.
