1 medium onion -- minced
4 cloves garlic -- minced
2 tablespoons chili powder
1 can chicken stock
12 ounces V-8® vegetable juice
1 medium green pepper -- diced
1 small zucchini -- diced
1 cup celery -- chopped
15 ounces diced tomatoes
15 ounces black beans -- rinsed
1 cup frozen corn
4 ounces diced green chiles
1 teaspoon dried oregano
1 teaspoon cumin
1 tablespoon cilantro pesto
Saute onion, garlic, green peppers, and celery over medium heat for about 5 minutes.
Add chili powder, stir in well and add broth, V-8 juice, zucchini, and tomatoes. Cook another 5 minutes.
Add beans, corn, green chilies, oregano, cilantro pesto, and cumin. Bring to a boil. Then simmer uncovered for 15 minutes.
